Protein Apple Crisp - Dairy Free
INGREDIENTS
1 1/2 cup organic rolled oats
3/4 cup (90g) vegan protein powder
3/4 cup brown sugar alternative* (or brown sugar)
1 tsp. ground cinnamon
3/4 tsp. baking soda
1/4 tsp. salt (optional)
1/4 tsp. ground cardamom (optional)
6 tbsp. vegan butter or unsalted butter, melted
6 tbsp. unsweetened applesauce
2 tbsp. (1 large) egg whites (1 tbsp. ground flax + 2 tbsp. water)
FILLING:
3 cups apple, chopped
1 tbsp. calorie-free sweetener (or sugar)
1 tbsp. lemon juice
1/2 tsp. ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees F.
Whisk together dry ingredients (through cardamom) in a medium mixing bowl.
Add wet ingredients through egg white (or flax + water) and mix until crumbly.
Chop apples into small bite-sized chunks and toss with sweetener, lemon, and cinnamon.
Spread half of the crumble mixture over the bottom of a parchment-lined 9”x9” baking pan. Press down well.
Spread apples over the bottom oat layer, then sprinkle remaining crumble over top, pressing down lightly.
Bake in preheated oven for 25-30 minutes until golden brown on top.
Cut into 9 servings and enjoy! Leftovers will keep in the fridge in an airtight container at least a week, or in the freezer at least a month.
