Easy Taco Skillet

Servings: 4

Ingredients

  • 1 lb lean ground beef, turkey or chicken

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 orange bell pepper, diced

  • 1 green bell pepper, diced

  • 1 small onion, diced

  • 2 tbsp taco seasoning, divided

  • 1/2 cup shredded cheddar cheese

  • salt and pepper to taste

  • fresh cilantro to taste

Instructions

  1. Heat a skillet over medium heat and spray with nonstick spray

  2. Add ground meat and season with salt and pepper. Allow to cook thoroughly, stirring occasionally.

  3. Season cooked meat with 1 tbsp taco seasoning. Stir to combine. Remove cooked meat from the skillet and set aside.

  4. To the same skillet, add the vegetables, season with salt and pepper and cook until soft.

  5. Add remaining taco seasoning to the vegetables, and stir to combine.

  6. Add the cooked meat back into the skillet and combine with the veggies. Season with salt and pepper to taste.

  7. Serve skillet over brown rice or cauliflower rice, garnish with shredded cheese and cilantro.
