One Pan Oatmeal Breakfast Encore

Ingredients

  • 2 ripe bananas, mashed

  • 2 cups rolled oats

  • 1 tbsp chia seeds

  • 2 cups milk

  • ½ cup Greek yogurt – plus a little extra on top for serving

  • ½ cup peanut butter

  • 1 cups sliced strawberries

  • ¼ cup white or dark choc chips (optional)

  • 2 tbsp honey for serving

Instructions

  1. Preheat oven to 350 degrees F. Grease 8x11 baking dish with with oil and set aside

  2. Use a fork to mash the bananas in baking dish. Add the oats, followed by chia seeds and milk, then stir to combine. Fold in Greek yogurt and peanut butter. Add strawberries on top and chocolate chips, if using.

  3. Bake in preheated oven until liquid is absorbed, about 25 minutes

  4. Add a dollop of Greek yogurt and drizzle of honey on top before serving, if desired.
