Roasted Shrimp & Veggie Salad

INGREDIENTS

·       2 Cups Chopped Romaine Lettuce

·       1 Cup Asparagus chopped

·       1 Cup Cherry Tomatoes

·       1 Cup Shredded Carrots

·       1 Cup of chopped Onion

·       1 Cup Yellow Bell Pepper Chopped

·       1 Pound of Raw Shrimp

·       1 TSP Olive oil

·       1 TSP chili powder

·       1 TSP oregano

·       ½ TSP pepper

SHRIMP SEASONING INGREDIENTS

·        1 TSP Salt

·        ½ TSP pepper

·        ½ TSP chili powder

·        ½ TSP oregano

·        1 FULL lime squeezed

DRESSING INGREDIENTS

·       1 TBSP Honey

·       3TBS Lime juice

·       2 TBSP Olive Oil

·       ½ TSP Chili Powder

·       Bake 400 10 Min

·       Bake 400 8 Min more with Shrimp

INSTRUCTIONS:

1.       Preheat Oven to 400 Degrees

2.      Arrange vegetables on cookie sheet sorted by type in rows

3.      Add vegetable seasoning evenly across all vegetables

4.      Bake 10 minutes

5.      Remove from oven, move vegetables over to arrange shrimp in center of baking sheet.

6.      Add shrimp seasoning ingredients over shrimp evenly

7.      Bake for 8 minutes

8.      Remove baking sheet from oven and toss all ingredients together on baking sheet

9.      Add dressing ingredients in separate bowl and whisk together

10.    Chop Lettuce and place in large salad bowl

11.      Add veggies and shrimp from baking sheet to salad

12.     Add dressing to salad bowl, toss and serve, enjoy!
