Date Balls
INGREDIENTS:
10-12 Medjool dates
2 cups of pecans
1/4 cup desiccated coconut
Pinch of salt
INSTRUCTIONS:
Pit the medjool dates and soak in warm water for 10 minutes until they soften
Place pitted dates and pecans and pinch of salt in food processor, blend on high until a thick dough is formed and mixture is sticky.
Scoop 1-2 tablespoons of the mixture and use hands to roll into ball.
Roll balls into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 balls.
