Date Balls

INGREDIENTS:

  • 10-12 Medjool dates

  • 2 cups of pecans

  • 1/4 cup desiccated coconut

  • Pinch of salt

INSTRUCTIONS:

  • Pit the medjool dates and soak in warm water for 10 minutes until they soften

  • Place pitted dates and pecans and pinch of salt in food processor, blend on high until a thick dough is formed and mixture is sticky.

  • Scoop 1-2 tablespoons of the mixture and use hands to roll into ball.

  • Roll balls into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 balls.
