Stuffed Zucchini Boats with Ground Turkey and Vegetables
serves 2-3
 
2 zucchinis
8-10 oz. ground turkey
4 oz. thawed frozen spinach
1/2 small red onion - diced
1/2 small red pepper - diced
salt & pepper
2 Tbsp. olive oil
 
- cut ends off zucchinis, cut lengthwise and scoop out seeds
- brush zucchinis with olive oil and salt & pepper
- roast for 10-15 minutes at 375 degrees
 
While zucchini is cooking:
- saute onion and red pepper in 2 Tbsp olive oil over medium high heat for 2-3 minutes
- add in spinach and continue sauteing for a minute
- set aside veggies on plate
- return pan to heat and add in ground turkey and cook through
- once cooked through, mix in veggies
- spoon over zucchini
