Protein Apple Crisp - Dairy Free

INGREDIENTS

  • 1 1/2 cup organic rolled oats

  • 3/4 cup (90g) vegan protein powder

  • 3/4 cup brown sugar alternative* (or brown sugar)

  • 1 tsp. ground cinnamon

  • 3/4 tsp. baking soda

  • 1/4 tsp. salt (optional)

  • 1/4 tsp. ground cardamom (optional)

  • 6 tbsp. vegan butter or unsalted butter, melted

  • 6 tbsp. unsweetened applesauce

  • 2 tbsp. (1 large) egg whites (1 tbsp. ground flax + 2 tbsp. water)

  • FILLING:

  • 3 cups apple, chopped

  • 1 tbsp. calorie-free sweetener (or sugar)

  • 1 tbsp. lemon juice

  • 1/2 tsp. ground cinnamon

DIRECTIONS

  1. Preheat oven to 350 degrees F.

  2. Whisk together dry ingredients (through cardamom) in a medium mixing bowl.

  3. Add wet ingredients through egg white (or flax + water) and mix until crumbly.

  4. Chop apples into small bite-sized chunks and toss with sweetener, lemon, and cinnamon.

  5. Spread half of the crumble mixture over the bottom of a parchment-lined 9”x9” baking pan. Press down well.

  6. Spread apples over the bottom oat layer, then sprinkle remaining crumble over top, pressing down lightly.

  7. Bake in preheated oven for 25-30 minutes until golden brown on top.

  8. Cut into 9 servings and enjoy! Leftovers will keep in the fridge in an airtight container at least a week, or in the freezer at least a month.
