Quick and Easy Chicken, Lemon and Olive Dish

INGREDIENTS

  • 2 Boneless skinless chicken breasts

  • 1 Lemon cut into wedges, seeds removed

  • 3/4 Cup pitted mixed olives

  • 1 Red Chile, roughly chopped (optional)

  • 3.5 Ounces Broccolini

  • 2 Tbsp Olive Oil

  • Dash Salt and Pepper

INSTRUCTIONS

Preheat oven to 400 F. Place the chicken, lemon wedges, olives and chopped red chile (if using) in a roasting dish. Drizzle the olive oil over the top and season everything with salt and pepper, then roast in oven for 30 minutes, until the chicken in cooked through.

Remove the roasting dish from the oven and add the broccolini. Return it all to the oven to roast for another 5 minutes, until broccolini is softened and charred a little. Serve and enjoy!
