Turkey Zucchini Meatballs
INGREDIENTS
· 1 lb. ground turkey
· 1 cup shredded zucchini (lightly squeezed to remove some of the liquid)
· 1 tsp. dried Italian Seasoning
· ½ tsp. garlic powder
· ½ tsp. onion powder
· 1/4 tsp. crushed red pepper
· ½ tsp. sea salt
· ¼ tsp. black pepper
INSTRUCTIONS
1. Pre-heat oven to 400 degrees. Cover a baking sheet with parchment paper.
2. Combine all of the ingredients in a bowl and mix with hands.
3. Form into 12 golf ball-sized meatballs and place on the baking sheet.
4. Bake for 16-18 minutes or until meatballs are cooked through and insides are no longer pink.
These can be eaten with many different items… marinara sauce, spaghetti squash or even more zucchini in noodle form!
